Cucumber Spring Roll

Cucumber Spring Roll

  • 2 large cucumber
  • 12 sheets nori (seaweed sheets)
  • 1⁄2 cup shredded red cabbage
  • 1⁄2 cup shredded carrots
  • ½ red pepper, cored, seeded and sliced
  • ½ yellow pepper cored, seeded and sliced
  • 4 scallions with green tops off and chopped (save bottoms for another use)
  • 1⁄4 cup fresh mint or cilantro leaves
  • 1 cup your favorite prepared peanut dipping sauce


  1. Make sheets from the cucumber according to VASTA instructions. Cut them into twelve 7 inch pieces.
  2. Layout the cucumber sheets on a flat surface or cutting board and cut nori to fit on top of cucumber sheets. 
  3. Mix cabbage, carrots, peppers together and divide evenly over the 12 nori covered cucumber sheets. 
  4. Distribute scallions and mint evenly over all 12 rolls.
  5. Tightly roll up the filled radish sheets and lay on a serving dish seam side down.
  6. Makes 4 servings, 3 each
