Curly French Fries

● 2 large white or russet potatoes, dried

● 1 tbsp olive oil

● 1 tsp sea salt

● Optional: 2 tbsp fresh herbs, ex: rosemary or thyme



1. Preheat oven to 400ºF on bake setting

2. Slice potatoes according to VASTA instruction, using the fettuccine blade

3. Using scissors or a knife cut the potato “strings” into smaller bite-sized fries

4. Add to a bowl and coat with olive oil

5. Spread out over two parchment-lined baking sheets ( use two as you do not want to

overcrowd potatoes)

6. Sprinkle with sea salt

7. Place trays in the oven and bake for 15 minutes

8. Remove from the oven and flip fries as best as you can, removing any fries that have

already crisped up

9. Bake for another 8-10 minutes

10. Remove trays and serve hot

11. Enjoy!
