Egg Salad Squash Wrap

  • 1 large yellow squash
  • 4 large hard boiled eggs peeled
  • 2 tbsp mayonnaise
  • 1 tsp mustard
  • Salt and pepper to taste
  • Romaine lettuce (optional)


  1. Make sheets from the squash according to VASTA instructions and cut into four 9" long pieces. 
  2. Chop eggs and mix with salt, pepper, mayonnaise and mustard. 
  3. Lay sheets out on a flat surface or cutting board and divide egg mixture evenly between the squash sheets. Roll each one tightly. 
  4. Place on serving dish seam side down. 
  5. Makes 4 servings, 1 each
