- Make sheets from the squash according to VASTA instructions and cut into four 9" long pieces.
- Chop eggs and mix with salt, pepper, mayonnaise and mustard.
- Lay sheets out on a flat surface or cutting board and divide egg mixture evenly between the squash sheets. Roll each one tightly.
- Place on serving dish seam side down.
- Makes 4 servings, 1 each
