
Eggplant Parmigiana

Ingredients
● 1 eggplant
● 1 package of mozzarella cheese
● ¼ cup spinach
● 1 jar marinara sauce
Directions
1. Preheat the oven to 350ºF
2. Slice eggplant according to VASTA instructions
3. Place in a single layer on a baking sheet
4. Bake in the oven for 5 minutes on each side
5. In a 9x13 inch baking dish spread marinara sauce to cover the bottom
6. Place a layer of eggplant slices in the sauce
7. Sprinkle with mozzarella cheese (can also add parmesan for extra flavor)
8. Repeat with remaining ingredients, ending with the cheeses
9. Sprinkle basil on top
10. Bake in the oven for 35 minutes, or until golden brown
