
Gluten Free Breaded Zucchini Ricotta Roll-ups

Ingredients
● 2 medium-sized zucchini
● 1/2 cup ricotta
● 3/4 cup zucchini
● 2 eggs
● Homemade seasoning (we used salt, pepper,
garlic powder, and red pepper flakes)
● ½ cup gluten-free flour (or regular flour)
● 1 cup gluten-free bread crumbs (or regular flour)
Directions
1. Slice the zucchini according to VASTA instructions
2. Place the zucchini sheets on a cookie sheet lined with paper towels
3. Let them dry out on the sheet for 15-20 minutes
4. While the zucchini dries out, combine ricotta, 1 egg, and seasoning
5. Take pieces of the zucchini, spoon some of the ricotta mix on to the zucchini, and roll-up.
Some pieces may need toothpicks to stay together, that’s ok for the time being
6. Place rolled-up zucchini on a baking sheet and freeze for at least 30 minutes
7. Place flour, 1 egg, and bread crumbs in separate bowls
8. Remove the zucchini roll-ups from the freezer and coat each one in flour, then egg, then
bread crumbs, and place back on the cookie sheet
9. Once all roll-ups are coated, place in the freezer for another 30 minutes
10. Preheat air fryer to 400
11. Spray the inside cavity of air fryer and place zucchini roll-ups in a single layer
12. Cook for 10 minutes or until lightly browned
13. Remove from air fryer and serve with your favorite tomato sauce
14. Enjoy!
