Seafood Style Zucchini Noodles

● 2 large zucchinis

● 4 cloves of garlic, chopped

● 2 shallots, diced

● 3 tomatoes, diced, or 2 cups of grape tomatoes,


● 4 tsp olive oil

● Salt and pepper

● Red pepper flakes, to taste

● 8 oz angel hair pasta (wheat or gluten-free for


● 2 tbsp chopped parsley or basil

● ¼ cup low-sodium vegetable / chicken broth

● Shrimp, de-shelled

● Lobster; cut up into small pieces



1. Slice zucchini noodles according to VASTA Instructions

2. In a large pot of salted boiling water, cook pasta according to instructions

3. While the pasta is cooking, heat a large sauté pan on medium heat and add oil

4. Add garlic and shallots and saute for about 1 minute

5. Add the zucchini noodles, and season with salt and pepper

6. Cook for about 2 minutes, then add shrimp, lobster, tomatoes, red pepper flakes,

parsley, and chicken broth

7. Stir and cook for 1 more minute

8. Remove from heat

9. Drain pasta when done reserving some of the water and toss the pass with the zucchini

noodles and tomatoes

10. Add pasta water and serve with parmesan cheese

11. Enjoy!
