- Make sheets from the zucchini according to VASTA instructions and cut into ten 9" long pieces.
- Mix together the cheeses and egg.
- Lay zucchini sheets on a flat surface and divide ricotta mixture evenly between the sheets.
- Roll each sheet tightly and arrange manicotti in 9x13" pan, seam side down.
- Spoon sauce over rolls until covered halfway and use the remaining sauce to serve with the manicotti later.
- Bake 30-35 minutes.
- Makes 4-5 servings
