Zucchini Manicotti

  • 2-3 large zucchini
  • 2 cups ricotta cheese
  • 1 1/2 cup shredded mozzarella cheese
  • 1 large egg
  • 1/4 cup Parmesan cheese
  • 24 oz jar tomato sauce


  1. Make sheets from the zucchini according to VASTA instructions and cut into ten 9" long pieces.
  2. Mix together the cheeses and egg.
  3. Lay zucchini sheets on a flat surface and divide ricotta mixture evenly between the sheets.
  4. Roll each sheet tightly and arrange manicotti in 9x13" pan, seam side down.
  5. Spoon sauce over rolls until covered halfway and use the remaining sauce to serve with the manicotti later.
  6. Bake 30-35 minutes.
  7. Makes 4-5 servings
